I made my pine nuts washed Old Fashioned again, but each time with improved techniques and subtle changes. This time, I adjusted the number of coffee filters, amount of pint nuts, number of washes. Most importantly, I chose Rye this time, half High West Rendezvous Rye and half Wild Turkey 101 Rye to get the right spice and heat.
Pine nuts wash (2 cups for 7 oz spirit, you will pour about 9 oz and lose 2 during the wash)
Toast them in dry fry pan over stove, medium heat. Muddle as they turn slightly brown for 5 minutes, til the oil is well released. Use a coffee dripper with 2 filters, pour the whisky over, do it twice.
Candy cap shroom maple syrup
Escuminac Canadian Maple Syrup. Add dried candy cap shroom, 2 days and more. No significant difference between 2 days vs 5 days.
2 oz pine nuts washed rye, half High West Rendezvous and half Wild Turkey 101 Rye
1 teaspoon candy cap shroom maple syrup
3 dashes of chocolate bitters from Better’s Bitters
